Chef David Guas Shares his DamGoodSweet Do-It-Yourself Wedding Cake Recipes
Choosing a wedding cake is not as easy as it looks—different flavors, fillings, frostings, and styles can overwhelm what should be a bride’s most delicious decision. With the right amount of preparation and patience, budget or Do-It-Yourself (DIY) brides can stun their guests with these home-style cakes from chef David Guas’ James Beard nominated cookbook, DamGoodSweet.
When making your own wedding cake, Guas’ biggest piece of advice is to keep it simple. “Have you ever worked with fondant before? Don’t take a chance days before your big day.” Guas says. Cakes such as his Red Velvet Cake with Cream Cheese Frosting taste as good as they look. Best of all, the crimson crumbs that collect throughout the baking process can be used as a charming decoration. No swags or sugar blossoms necessary.
Guas also advises to make a small “beauty” cake that can be photographed and cut during the reception. A more deconstructed version can be plated and served to guests immediately following the cutting ceremony. With the Ponchatoula Strawberry and Brown Butter Shortcake, nothing is easier than baking large sheets of the cake and making a container of the infused strawberries to be served by the catering service while you enjoy your night.
